Together with the vines, olive trees were introduced to Tuscany by the Etruscans many centuries ago. Today, both plants define a land of rare beauty and abundance. In Tuscany, extra virgin olive oil is an essential ingredient in our cuisine and the perfect finishing touch for countless dishes. The oil mill is the heart of EVO production, where in a very short time the organoleptic properties of this fresh and precious olive juice are determined. With the support of local guides, you will discover all the secrets behind the process. Extraction is carried out strictly cold through mechanical procedures, and the pressing methods vary to bring out the best in each variety—using hammer, disc and dripper crushers. We will visit two oil mills that differ greatly in style and technique, each producing high-quality Tuscan EVO with distinct aromas and flavors. Lunch will be served at the farm, where you will enjoy the finest expressions of extra virgin olive oil and its perfect pairings with food. You will learn about its characteristics, culinary uses and the many health benefits of this extraordinary product, all while surrounded by charming views.

EVO mills can be visited all year round, but please remember that they operate only in November and December. During the visit, you will see the machinery and receive an explanation of how everything works.
